Professionals don’t use it, so Why is non-stick cookware so popular among amateur cooks?
I personally don’t use them just because I prefer not to use rubber spatulas in high heat. Another thing I worry about is the teflon being scraped in the food.
Teflon puts off fumes when heated that are actually toxic. I work in a professional kitchen and we only use non-stick pans for making omelets. We use stainless steel for everything else. Aluminum isn’t that great to use, either, because it’s soft and acidic foods can leach the aluminum out of the pan and into the food. We just make sure to use enough oil or butter in the pan to keep stuff from sticking. Stuff doesn’t stick and clean up is easy. The pans go through the dishwasher.
Also, the TV chefs on the food network that use non-stick pans do so because they’re appealing to the home cook.
